Pork butt, look at dat ass!

I made a pork butt because of DD&D and some friendly prodding by good friends. In true Matt style I made way too damn much, starting with 17lbs of meat. From my recipe I learned that it cooks at about 1.5 hours per pound. No shit, this meat took 25 hours to cook.

One thing I learned on this go round was that the temperature climbs pretty darn quickly for the first couple of hours and then only goes about 1 degree per hour for the last 12 or so.

I didn’t get any pictures of the pulled pork finale, but I can attest that it was freaking amazing. We served it up with 7 different Sweet Baby Ray’s sauces and let people pile the meat themselves.

P.S. I am aware that pork butt is actually a shoulder cut, but it’s more fun to say “look at dat ass” than “damn those are nice shoulders”
